Easy Vegan Bounty Slice

A vegan and gluten free twist on a favourite sweet treat 🙂

 

Ingredients:
500gm Desiccated Coconut
320gm tin coconut condensed milk
1 tsp vanilla essence
3 tbs melted coconut oil

1 cup vegan chocolate buttons melted
2 tbs coconut cream

 

Method:

Line a tray, with a lip, with baking paper.

In a large bowl, mix together desiccated coconut, coconut condensed milk, vanilla essence and melted coconut oil.

In a separate bowl, melt the chocolate. You can use the best method you like. I sit the bowl over a pot of gently simmering water. Just be mindful not to get water into the chocolate, keep the heat low or turn the heat off and gently melt. Mix the coconut cream into the melted chocolate.

Press the desiccated coconut mix onto the tray and flatten. Spoon the chocolate mix on top and spread evenly. Set in the fridge (or freezer if you’d like it to set quickly).

Cut to the sizes you require. I cut it into 36.
