Easy Pan-Fried Portobello Mushroom Burger

Here’s an easy ‘meal in a moment’ which is not only quick but full of nutrition. Portobello mushrooms are especially rich sources of selenium, copper and niacin which are essential for the healthy functioning of the brain, immune system, connective tissue and our energy production. This recipe is for burgers but just as easily the mushrooms can be used as a meat substitute in a main meal.

 

Ingredients:
2 Portobello mushrooms
2 slices of red capsicum
1 brown onion sliced
2 slices sharp cheddar cheese
2 toasted Turkish rolls
Toppings: sliced tomatoes, lettuce and continental cucumbers
Tomato sauce/Ketchup
Hot English mustard

 

Method:
1. Prep Mushrooms: Clean mushrooms with a damp paper towel and remove stems.
2. Cook Mushroom Burgers: Heat a non-stick skillet over medium heat. Add the mushrooms with the sliced onions around and cover for 5 minutes. (The mushroom will absorb the flavor of the caramelized onions).
3. Put 1 slice of capsicum on each mushroom, add the sliced cheese and caramelized onions inside the capsicum and sprinkle with salt and pepper. Cover again for 3 minutes.
4. Assemble and serve: Serve mushroom burgers on toasted Turkish rolls with tomato sauce, hot English mustard, lettuce, tomatoes and cucumbers. \
