This meal is warming, hearty, tasty and rich. Serve it with Mexican rice and corn chips, sour cream and salsa for a healthy, satisfying nutritional meal.
Chilli Con Tofu
Have ready
- 1 large can red kidney beans, un-drained
- 750g block frozen tofu, thawed, squeezed dry and torn into bite size pieces
Whip together
- ¼ cup water
- 2 tablespoons soy sauce
- 1 tablespoon peanut butter
- 1 teaspoon onion powder
- ½ teaspoon cumin
- ¼ teaspoon garlic powder
- Pour this over the prepared tofu pieces and squeeze in until all liquid is absorbed evenly.
- Spread the tofu pieces on the oiled baking tray and bake 20 minutes, flip them over and bake 10 minutes on the other side.
*Sauté in a heavy soup pot until tender:
- 1 tablespoon oil
- 1 large green capsicum diced
- 1 large onion, diced
- 2 cloves garlic, minced
Add to the pot:
- Un-drained beans
- ½ teaspoon chilli powder
- 1 teaspoon cumin
- 1 teaspoon salt
- Baked tofu pieces
