Recipe -- Chilli Con Tofu


This meal is warming, hearty, tasty and rich. Serve it with Mexican rice and corn chips, sour cream and salsa for a healthy, satisfying nutritional meal.

Chilli Con Tofu

Have ready

  • 1 large can red kidney beans, un-drained
  • 750g block frozen tofu, thawed, squeezed dry and torn into bite size pieces

Whip together

  • ¼ cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon peanut butter
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • Pour this over the prepared tofu pieces and squeeze in until all liquid is absorbed evenly.
  • Spread the tofu pieces on the oiled baking tray and bake 20 minutes, flip them over and bake 10 minutes on the other side.

*Sauté in a heavy soup pot until tender:

  • 1 tablespoon oil
  • 1 large green capsicum diced
  • 1 large onion, diced
  • 2 cloves garlic, minced

Add to the pot:

  • Un-drained beans
  • ½ teaspoon chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • Baked tofu pieces
