Chickpea Omelette – Gluten Free

One of our lovely ASMY volunteers, Cat, demonstrated this delicious chickpea flour omelette at one of our interactive cooking classes.  Of course, needless to say, it was a hit!

Ingredients

1 Cup Chickpea Flour
1 Tbsp Onion – diced
1 Garlic Clove – mashed
1⁄2 tsp Cracked Pepper
1/3 Cup Nutritional Yeast

Raw Chia Layer Pudding with a Banana Cream Coulis, Seasonal Fruit and Pecan Walnut Maple Base

Ingredients

150gms of chia seeds
1 can of coconut water (350ml)
1 can of coconut milk (400ml)
1 tablespoon of vanilla essence
250ml of mango nectar
zest of one orange
juice of the same orange
100gms of pecan nuts, roasted
100gms of walnuts roasted
pinch of sea salt
maple syrup
6 ripe bananas
seasonal fruit, chopped into small cubes unsweetened coconut flakes

Raw Vegan Gluten Free Passionfruit Pie

 

Here’s a sweet, simple vegan “cheesecake” that is so easy to make and so satisfying to eat!!

Base:

2 cups desiccated coconut
20 regular dates soaked for 2 hours

Mix base ingredients in food processor, press firmly into pan and then temporarily set in freezer.

Top:

1 cup of coconut cream
20 regular soaked dates
4 tablespoons coconut oil
1 teaspoon vanilla

Raw Gluten Free Vegan Tahini Bliss Balls

 

(Makes 10 large balls)

1 cup hulled tahini (can use unhulled)
2/3 cup rice malt syrup
1 teaspoon natural vanilla essence
Pinch of Himalayan salt
2 tablespoons cacao or carob powder
2 and ½ cups desiccated coconut

Briefly mix the tahini, rice malt syrup, vanilla and salt in food processor until combined.

Now add the cacao/carob and mix.

Finally add the desiccated coconut and mix.

These absolutely delicious falafel with hummus were one of the highlights of our Raw Energy Lifestyle Workshop last Saturday, so we thought we’d share them with you.

Falafel

1 cup pumpkin seeds
1⁄2 cup cashews or sprouted chickpeas
2 tablespoons fresh dill, finely chopped
1 teaspoon ground fresh coriander
2 teaspoons cumin
8 sun-dried tomato halves, soaked for 1–2 hours and then chopped
