1 large/2 medium zucchini – grated
1 can chickpeas
4 tbsp chickpea flour (Besan flour)
1 heaped tbsp nutritional yeast
Salt – to taste
Chili powder or paprika – to taste
1 clove garlic
These tasty tofu rolls are a vegetarian version of sausage rolls and kids absolutely love them. They are great for parties, picnics and lunch boxes as well as a light lunch or dinner served with fresh garden salad and chips.
1 packet puff pastry
500g firm tofu
6 slices whole meal bread
1 small onion
1 clove crushed garlic

This is a delicious vegetarian version of Vietnamese rice wraps or fresh spring rolls. They are simple to prepare, low fat, and packed with fresh, healthy ingredients – a great way to get those wholesome veggies into the family. These wraps are really nice served with dipping sauce.
