Fried rice is one of the most popular of all Chinese dishes and you can see why. It is tasty, healthy and contains vegetables, grains and protein so it is a complete meal in itself. Quick and easy to prepare, this recipe is a simple vegetarian version that will satisfy even the most voracious appetite.

Ingredients
- 2 tablespoon sesame oil
- 2 cloves garlic, minced
- 2 teaspoons ginger, minced
- 2 sticks celery, finely diced
- 1 small red capsicum, finely diced
- ½ cup carrot, finely diced
- ½ cup frozen peas
- 1 block fried tofu crumbled
- 4 cups rice, cooked without salt and refrigerated overnight
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- ½ teaspoon sugar
- 1 teaspoon salt

Method
Mix last 5 ingredients
Scramble tofu in a little oil with a sprinkle of turmeric to give it a yellow colour
Have all other ingredients prepared
Heat the 2 tablespoons sesame oil in wok or large saucepan
Sauté garlic, ginger, celery, capsicum and carrots for approx. 1 minute
Add peas and scrambled tofu
Fry for another minute
Add rice, stir through and drizzle over sauces
Stir fry for another minute or so until all ingredients are mixed and heated
Serve while hot
