Vegan Sticky Date Pudding

Dates anyone?  If you are a date lover this is the dessert for you!  This pudding is rich, sweet and moorish.  However it is very filling, so you’ll probably be only able to eat one serving.  The good news is that It gets better each day you leave it, so it definitely won’t go to waste.  You can reheat it in the microwave or pop some foil over it and heat in the oven.  It is much nicer warm.
Ingredients for pudding:
  • 200g soft vegan butter
  • 1 cup soft brown sugar
  • 2 1/2 cups pitted dates
  • 400ml plant milk
  • 2 tsp. vanilla
  • 3 cups self-raising flour
  • 2 tsp. baking soda
  • 1 1/2 cup chopped walnuts
Ingredients for sauce:
  • 200g soft vegan butter
  • 1 1/2 cups soft brown sugar
  • 100ml plant milk
  • 2 tsp. vanilla
Method for pudding:
Mix butter and brown sugar until creamy.
In a saucepan, add dates, milk and vanilla and bring to boil. Simmer until dates break down and it becomes like a paste.
Add to butter mixture.
Add self-raising flour, baking soda and walnuts, and stir until it looks like thick peanut butter.
Place in large rectangular cake pan.
Bake for 30-40 minutes in moderate oven, until sharp knife comes out clean.
Method for sauce:
In a medium saucepan, add butter, sugar, milk and vanilla.
Bring to boil.
Simmer for 5 minutes without stirring.
To assemble:
Prick cake all over with a sharp knife, toothpick or fork.
Pour 1/2-2/3 of sauce over the cake and let it soak in well
Keep some sauce for serving.
