Vegan Maple Date Self-Saucing Pudding

A lot of people asked me for this recipe from last Wednesday night’s Mantra Room Kirtan. It is such a simple recipe to whip up and so so delicious.

Pudding

  • 1 cup chopped dried dates
  • 1 1/2 cups self-raising flour (can be wholemeal)
  • 1/2 cup maple syrup
  • 3/4 cup coconut cream Sauce
  • 2 cups boiling water
  • 1 cup maple syrup
  • 2 x tablespoons vegan butter

Instructions for Pudding

Cover dates in boiling water and let them sit for 10 minutes, drain

Preheat oven to 180c or 160c for a fan-forced oven

Grease a shallow ovenproof dish (2 litre or 8-cup capacity)

Sift the flour into a bowl

Add the drained dates and coconut cream and 1/2 cup maple syrup

Mix until combined

In a large heatproof jug, place the butter and then the boiling water

Wait until butter is melted then add the maple syrup and mix well

Very gently pour over the top of the pudding batter

Place dish on oven tray

Bake for about 40minutes or until browned and centre is firm to touch

Stand for 10 minutes before serving with whipped or thick coconut cream or ice-cream

The more the pudding cools the thicker the sauce will become I like the sauce thick so I let it cool down until just warm 2 cups seems a lot of water, but it makes it really saucy so I’d stick with the whole 2 cups.
