This rich and light mousse is so simple and easy to make and it’s healthy!
You should get approximately 3/4 cup Aquafaba from each can of chickpeas. You can also use the liquid from white beans or any other beans for that matter.
Place into a bowl with 1/4 cup fine coconut sugar (you can blend it if it isn’t fine when you buy it). Alternatively you can use icing sugar. Now whip with a hand held or upright electric beater for approx. 10 minutes or until the Aquafaba forms peaks and is very thick and stiff. Don’t worry you can’t overheat it, better to beat too long than not enough.
Melt 125g vegan chocolate and wait until it cools down a little, you don’t want it to be too hot when you add it or it will break the Aquafaba down.
Stir through well, spoon into cups and refrigerate until set – about 1/2 hour
