Tofish Three Ways

 

If you like sushi, this is the dish for you. Slices of tofu are dipped in soy sauce, wrapped in nori and then battered and deep-fried into crispy, mouth-watering delights. Serve them with lemon wedges for a delicious, healthy alternative to battered fish.

Here I’m doing the tofish 3 ways so you get to choose which one is best for you. the first steps are the same for each method. The assembly is slighly different so I’ve added the steps at the bottom for the crumbed and baked tofish.

Ingredients

1 450g block tofu, cut to 10 slices
2 1/2 sheets nori, each sheet cut into 4 strips
Soy sauce for dipping
Oil for frying, I used rice bran oil, but sunflower is really nice too
Batter

1 cup chickpea flour (besan) If you want it super crisp use 1/2 cup chickpea and 1/2 cup self-raising flour or if you don’t have besan flour, just use self-raising flour
1 tablespoon vegetable stock powder
1/2 teaspoon turmeric
Pinch of salt to taste (you may not need salt as the stock powder is pretty salty, but everyone has different tastes when it comes to how much salt to use
1/2 cup or more sparkling water
Method

Batter

Instructions for batter Mix all dry ingredients together Add water a little at a time until the batter is a nice smooth consistency, not too thin or it won’t stick to the tofu and too thick probably won’t cook on the inside. The batter needs to be thick enough to stick to the tofu evenly.

Assembling

Wrap each slice of tofu in the nori, dip well in the soy sauce to soften the nori, dip in batter and place gently in the oil, flip until golden brown on both sides and drain on absorbent paper. Serve immediately with lemon juice and vegan mayo, garnish with parsley

Crumbed – fried and baked
After you have dipped the tofish into the batter, dip into a bowl of panko (japanese breadcrumbs) and coat well before deep frying or bake on baking paper sprayed with olive oil spray in an oven set to approx. 200degrees celcius for around 10 to 15 minutes, until crispy and cooked through.
