I discovered this amazing Raw Dessert on Harry Bolman’s facebook page. He has lots of awesome vegan get togethers on the Gold Coast where they share these delicious desserts. He’ll be sending new recipes through on a regular basis, so keep posted. We’ll soon have a whole library of them.
- 1 and 1/2 cups desiccated coconut
- 1/2 cup soaked and drained raw cashews
- 16 soaked and drained regular dates
Mix together in food processor into sticky crumb then press into base of pan.
- 1 and 1/2 cups soaked cashews
- Juice of a lemon
Process in food processor until smooth, then add
- 3 tablespoons rice malt syrup or maple syrup
- 250g strawberries
- 4 tablespoons coconut oil
- 1/2 teaspoon vanilla essence
Blend again and pour onto base. Set in fridge or freezer.
