Raw Vegan Snickers Slice

This is the bomb!  Tastes so much better than store bought snickers.  Healthy, rich, delicious and filling, I’ve never come across anyone who hasn’t raved.
Ingredients
Nougat Layer
1 cup dates (soaked in hot water for approx. 10 to 20 minutes and drained well)
8 tablespoons smooth peanut butter
2 teaspoons vanilla essence
2-3 cups almond meal/oat flour (blend some rolled oats until fine like flour)
Caramel Layer
3 cups dates (soaked in hot water for approx. 10 to 20 minutes and drained well)
9 tablspoons smooth peanut butter
3 teaspoons vanilla
1/8 teaspoon salt
Peanut Layer
1/2-1 cup roasted peanuts salted or unsalted depending on taste, chopped or whole
Chocolate Layer
1/2 cup maple syrup
1/2 cup coconut oil
1/2 cup cacao or carob powder
Instructions
Nougat Layer
Line a baking tray with oven paper.
Process the dates, peanut butter and vanilla until smooth and creamy and the dates are completely broken down
Add the oat flour or almond meal a little at a time until it comes together in a ball and is firm enough to press into your baking tray
Press into tray
Caramel Layer
Add the dates, peanut butter, vanilla and salt to the processor (no need to wash first)
Process until completely smooth, it’ll resemble caramel, think and dense
Spread over the nougat layer
Peanut Layer
Sprinkle the peanuts over the caramel
Chocolate/Carob Layer
In a mixing bowl add all ingredients and mix well with a whisk, makes sure it is very well incorporated and the oil has blended well with the other ingredients
Pour over the peanut layer
Refrigerate until set (approximately 1 hour)
Remove from the fridge and cut into squares or slices
Put the squares into an airtight container and store them in the freezer for up to 3 months and the fridge up to 2 weeks.
Please note, you can melt vegan chocolate or carob and pour over the top instead of the coconut oil mix.
