Gnocchi is such a delicious dish that it has spread throughout the world and is now available at all supermarkets. However nothing you can buy compares to those mouth-watering home-made dumplings that melt in your mouth. Here is a recipe for traditional Gnocchi dumplings that are served in a fresh tomato sauce, flavoured with basil, parsley and black pepper. You can also serve gnocchi with a rich cheese sauce or drizzled with olive oil and sprinkled with parmesan cheese. There are many ways to tantalise your taste buds with Gnocchi!

Ingredients
Sauce
- 2 tablespoons olive oil
- 1 clove garlic
- 1 large can pureed tomatoes
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh basil
- Grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Gnocchi
- 500g potatoes
- 1 ½ cups self-raising flour
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 1 tablespoon milk

Method
Sauce
Heat oil and sauté garlic.
Add the tomatoes, salt, pepper, and basil.
Simmer for approx. 30 minutes stirring occasionally until thickened.

Gnocchi
Peel, quarter and boil potatoes in slightly salted water until very tender. Mash very well.
Add sifted flour, salt, nutmeg, and milk. Mix well.
Knead for 2 minutes.
Roll dough out into sausage shapes.
Cut the rolls into 2cm lengths.
Press with a fork.
