Spring Fried Rice

This is a great recipe specially if you are trying to get more veggies into your kids🤗This is my son’s favourite meal so I thought it would be a good idea to share☺️
Feel free to alternate veggies as well so they get the different nutrition that their little bodies need to grow healthy 🤗

Ingredients for the rice:

1 cup of basmati rice washed, soaked overnight and rinsed
1 large carrot peeled and grated
1 zucchini grated
1/2 onion chopped finely
1 Tbs extra virgin olive oil
1/4 tsp of mineral salt
1 3/4 cup of filtered boiling water

Rice preparation:

In a sauce pan, heat oil on medium heat and fry onions until slightly brown.
Add rice and grated veggies, stir fry for a few seconds, then add boiling water and salt. Stir it, cover with a lid and bring the rice to a boiling point. Lower the heat and allow it to cook until all water is evaporated. Should take about 10-15 min.
Once rice is cooked, turn heat off fluff the rice once, cover it again and set aside.

Ingredients for tofu veggie stir fry:

350 g organic firm tofu cut into cubes
1/2 onion chopped finely
2Tbs Gluten free soy sauce or to taste
1 large head of broccoli cut into florets
1/2 cup of green peas
2 Tbs of extra virgin olive oil
Juice of 1/2 lime

Preparation for the tofu veggie stir fry

In a frypan heat oil on medium high heat and add tofu, onions and 1/2 of the soy sauce. Stir fry until golden brown.
Then add broccoli and the other half of the soy sauce, stir fry until broccoli is cooked to your taste.
Add peas and reserved rice and stir fry all together until combined. Add lime juice, mix again, and serve 🤗
