For one person:
Ingredients
Rice noodles – 1 serve
TVP
1 – 2 tbs cooking oil
1/4 cup TVP
1/4 cup boiling hot water
1/2 tsp stock
1 tsp garlic
1 tsp ginger
1 tbs soy sauce
1 tbs shaoxing wine vinegar
1 spring onion (white part only) finely sliced
Sauce
1/2 tbs peanut butter
1/2 tbs ginger
2 tbs chilli oil
1 tbs soy sauce
1 tbs kecap manis
1 tbs black vinegar
1 spring onion (green part only) finely sliced
2 tbs noodle water
Garnish
Spring onion
Lime
Sesame seeds
Bok Choi
Purple Cabbage
Instructions
1. Cook the noodles to instructions
2. Heat the cooking oil on medium heat, once heated add the tvp and spring onion. Mix until combined. Add the ginger and garlic and mix for a minute or so.
3. Add the soy sauce and shaoxing wine. Cook until the tvp becomes slightly browned and crispy
5. Add the bok choi to the noodle water when the noodles have about a minute remaining. Drain the noodles and bok choi once cooked.
6. Mix the noodle sauce in the serving bowl, add the noodles into the bowl and mix until combined
7. Add the tvp on top and the garnishes. Serve immediately.
