Don’t we all like a salad dressing that is a little different. French, balsamic and Italian abound. This particular salad dressing combines silken tofu with honey and mustard for a delicious yet unique flavour. Silken tofu is low in fat, high in protein and low GI, all the more reason to give it a try!
⅔ cup of silken tofu
2 tablespoons flaxseed or extra virgin olive oil
2 tablespoons reduced fat eggless mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon mustard – Dijon or wholegrain
1 tablespoon honey
¼ teaspoon salt
¼ cup water
¼ cup parsley
¼ cup mint leaves.
- Place all the ingredients into a blender and process until smooth.
- Chill before serving.
