Easy Vegan Baklava Rolls

For the rolls:
  • 3 cups walnuts, almonds, pistacios, any nut of your choice. I actually like roasted almonds best and the good thing is you can buy them already dry roasted.
  • 1-2 teaspoons cinnamon powder, depending how much you like the taste of cinnamon.
  • 1-2 tablespoons honey, depending how sweet you want them
  • A dash or two of water, just enough to get the mix to bind together
  • approx 3 sheets of thick style fillo pastry
  • Butter or oil for brushing the pastry sheets, I used sunflower. Best to use an oil that doesn’t have a strong flavour.
For the Syrup
  • 1 cup of honey or maple syrup
  • a squeeze or two of lemon juice
  • A dash of water to thin the honey down. You won’t need water if you are using maple syrup
Whisk well to combine
Assembling
Brush a sheet of pastry lightly with oil of butter
Place the mixture down one end and roll it up, right to the end of the pastry sheet.
Place the roll with the seam underneath
Place in a baking tray lined with an oiled sheet of baking paper
Place the roll on the baking paper and brush the top lightly
Cut into 4 even sized rolls
Repeat with the remaining mixture
Place in a pre-heated moderate oven for 30 to 40 minutes until the pastry is golden brown and cooked all the way around, bottom included.
Pour over the honey/maple syrup while the rolls are still hot
Let them soak overnight if you can wait that long
