Recipe
- 2 cups self raising flour
- 2/3 cup raw sugar
- Zest 2 oranges
- 1/2 cup melted vegan butter (nuttelex is good)
- 1 cup orange juice
- 2 tablespoons coconut yoghurt
Instructions
Mix flour, sugar and zest
In another bowl mix juice melted butter and coconut yoghurt
Pour the wet ingredients into the dry ingredients and mix well
Pour into lamination tin
Syrup
- 1 1/3 cup raw sugar
- 2 1/2 cups orange juice
- Heat until sugar has melted
Pour gently over the uncooked cake mix using the back of a spoon
180 degrees Celsius for 30 to 40 minutes until toothpick comes out clean
Serve with coconut cream or coconut yoghurt
