This is one of my favourite salad dressings and is a perfect accompaniment to steamed or roasted baby chat potatoes. I like to sprinkle the potatoes with some pine nuts, slice a cucumber and throw some whole basil leaves on top to garnish.
1 cup basil leaves, loosely packed
2 cloves garlic, crushed
2 tablespoons pine nuts, toasted
2 tablespoons grated cheese
½ cup eggless mayonnaise
¼ cup sour cream
- Combine basil, garlic, 2 tablespoons of pine nuts and the cheese in processor and process until smooth. Add eggless mayonnaise and sour cream and process again until smooth.
