Makes 1 small loaf tin. If you have a large loaf tin, you can double the recipe.
Ingredients:
1 cup cornmeal/polenta
½ cup barley flour
½ cup oat flour
½ teaspoon sea salt
1 teaspoon baking powder
1½ cups buttermilk, or ½ cup plain low-fat yogurt and 1 cup water
1 tablespoon apple concentrate
Method:
Grease well or line a loaf tin with baking paper.
Combine all of the above ingredients and bake in a preheated oven at 180 degrees for around 35-40 minutes. To test, skewer the bread, if it comes out clean it is ready. Allow to cool before cutting, spread with your favourite spread or butter.
For a dairy free option you could use coconut yoghurt.
