This mayo is the bomb. It is creamy, healthy, inexpensive and absolutely delicious. It is our fav mayo at The Mantra Room and everyone wants the recipe so here it is!
Liquid drained from 1 can chickpeas
3/4 to 1 tsp salt (I used black salt)
1 tsp Dijon mustard
Juice from 1 lemon
1/2 tsp onion powder
1/8 to 1/4 tsp garlic powder
Approx 10 chick peas
1 to 2 cups oil (use oils that don’t have much flavour like sunflower or rice bran) Olive and peanut are too strong and will overpower.
Place all ingredients except for the oil into a blender and blend well, then stream the oil in slowly until it reaches your required consistency. The less oil the thinner the mayo will be, more oil will make it nice and thick.
* The mayo will thicken when refrigerated
