Best Carob Waffles Ever (Vegan + GF)

This is a great gluten free recipe that both kids and adults absolutely love! ๐Ÿ˜Š

 

Ingredients:
2 cups of nut milk
1 Tbsp of flaxseed meal
3 Tbsp of liquid coconut oil
1 cup of buckwheat flour
1 cup of brown rice flour
1/4 cup carob powder
Pinch of salt
1 tsp of baking powder
1 tsp of baking soda
1/2 cup carob chips/buttons

 

Method:

In a glass bowl mix the milk with flaxseed meal and let sit for 5 min. Then add coconut oil and stir.
In a separate bowl mix both flours, carob powder, baking soda, baking powder and salt. Add to wet ingredients. Mix with a hand mixer until batter is smooth.
Add the carob chips and fold it through the batter. Scoop bater on a waffle maker and cook using the waffle maker instructions.
Once ready, spread ghee or vegan butter and drizzle maple syrup on top. Serve with plain or fruit yogurt, fresh fruit or just as it is ๐Ÿค—
