These are very easy, gluten free, vegan friendly and delicious!
Makes around 25
Ingredients:
2.5 cups almond meal
¾ cup icing mixture (I use the one with tapioca flour)
1 tsp lemon zest
½ tsp almond essence
½ tsp vanilla paste
3 tbsp water
Extra icing mixture for dusting
Glace cherries, vegan friendly
Method:
Preheat the oven to 180 degrees fan forced.
Put all ingredients together in a bowl, except the glace cherries and extra icing sugar. Mix by hand, almost kneading it together – you may need a dash more water if it’s dry, but be careful not to add too much as it can make the biscuits too soft.
Roll into balls about a tablespoon each, or use a small cookie scoop if you have one. Place on a baking paper lined tray, you don’t need too much room in between. You can have slightly wet hands or a wet scoop to help with the mixture sticking.
Press into the middle with your finger, creating a space for the cherry. Place a glace cherry on each cookie.
Bake for about 10-15 minutes or until golden brown. Allow to cool, these will firm up as they cool.
Dust with icing sugar.
