This healthy, low fat, rice loaf is very tasty indeed and has everything needed for a well balanced, nutritious meal. It is served with an easy to prepare walnut parsley gravy to add that extra touch and is delicious served with a fresh garden salad or good old mashed potato and veggies.
Loaf
Ingredients
- 2 cups cooked brown rice
- ¼ cup walnuts
- 1 teaspoon vegetable oil
- 2 small stalks celery, chopped
- 1 medium onion, diced
- ¼ cup minced parsley
- ¾ cup whole wheat bread crumbs
- ¼ cup rolled oats.
- ½ cup water
- 1 tablespoon soy sauce
- ¼ teaspoon each of basil, oregano and garlic granules
Method
Process walnuts in blender.
Sauté the celery, parsley and onions in oil in a non stick pan.
Add water, a spoonful at a time, if needed to prevent sticking.
Cook until parsley wilts a little bit and onions are translucent.
Process in blender.
Add walnuts, vegetables and rest of ingredients to the rice and mix.
Place in an oiled casserole dish.
Bake at 180°C for 30 mins.
Serve with Walnut Parsley Gravy.
Walnut Parsley Gravy
Ingredients
- ½ cup walnut pieces
- ½ cup chopped parsley
- 1 ½ cups water
- 2 ½ tablespoons arrowroot powder
- 1 teaspoon garlic granules
- ¼ teaspoon salt
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
Method
Blend ingredients.
Put in saucepan over low heat.
Stir until thickened.
