Vegan Banana Pancakes with Poached Orange Segments

 

For a lazy Sunday morning!

Pancake batter:

  • 2 very ripe bananas
  • 1.5 cups of self raising flour 1 teaspoon of baking powder 2 table spoons of corn starch 2 cups of water
  • 1 teaspoon of vanilla essence pinch of salt
  • half a cup of raw sugar

Orange segments:

  • 3 oranges, peeled and separated into segments 1.5 cups of water
  • 3⁄4 cup of raw sugar
  • 1⁄2 teaspoon of star anise powder
  • 1⁄2 teaspoon of cinnamon.

Method

Smoosh the banana and vanilla essence together in one bowl. In a separate bowl, mix flour, corn starch, sugar, salt and sugar.
Add the banana and vanilla essence and water to the flour and thoroughly mix. If the batter is a bit too thick, add a splash more water. Allow to rest for 15 minutes.

For the poached citrus, place the sugar, water, orange segments and spices on a medim/low heat and stir to dissolve the sugar and spices. Allow to come to the boil and cook on a low heat for 10 minutes. Take off the heat and set aside.
To cook the pancakes, place a non stick frying pan onto medium heat.

Once the pan is hot, ladle some batter onto the pan and then pick up and tilt the pan to spread the pancake batter around. Allow the pancake batter to cook. The batter will start to have little holes appear as it cooks. Each side should take approximately 1 minute. Take a flat edged metal spatula and lever the pancake gentle from the non stick pan. Flip over. Cook the other side of the pancake for another minute or so.

To serve, layer the citrus and syrup on top of each pancake in a delicious stack!
