Raw Vegan Falafel with Hummus

 

These absolutely delicious falafel with hummus were one of the highlights of our Raw Energy Lifestyle Workshop last Saturday, so we thought we’d share them with you.

Falafel

  • 1 cup pumpkin seeds
  • 1⁄2 cup cashews or sprouted chickpeas
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon ground fresh coriander
  • 2 teaspoons cumin
  • 8 sun-dried tomato halves, soaked for 1–2 hours and then chopped
  • 3 tablespoons fresh coriander (cilantro) 1 clove garlic
1 shallot
1⁄4 cup olives, stones removed
  • 2 teaspoons oregano Pinch cayenne pepper
  • 1⁄4 cup water
1 tablespoon lemon juice

Process all ingredients in a food processor until thoroughly mixed and form into 6–8 falafel

Hummus

  • 1⁄2 cup macadamia nuts
  • 3 tablespoons lemon juice
  • 3 tablespoons tahini
  • 1⁄4 teaspoon salt
  • 1⁄2 cup water
  • 10 sun-dried tomato halves

Blend all ingredients in a high-power blender until smooth
