Sweet Potato and Leek Loaf with Crumble Topping

Not only is this loaf absolutely delicious, but it is packed full of healthy ingredients. Sweet potatoes are a rich source of vitamin A and C and leeks provide potassium, folic acid, as well as vitamin C. Ingredients

  • 2 tablespoons olive oil
  • 1 bunch leeks, sliced
  • 3 cloves garlic, crushed
  • 5 medium sweet potatoes
  • 125g cream cheese (light can be substituted)
  • ½ teaspoon salt
  • 1 teaspoon ground coriander
  • 1 teaspoon nutmeg

Method

Sauté the leeks and garlic in oil until soft
Steam or boil the sweet potatoes until tender, then mash with the cream cheese
Mix all the loaf ingredients together and spoon into a large oiled casserole dish

Topping

Ingredients

  • 1 cup wheatgerm
  • 1 cup wholemeal flour
  • ½ teaspoon coriander
  • ½ teaspoon cumin
  • ¾ cup butter
  • Pinch salt

Method

Mix together all the dry ingredients and rub in the butter until the mixture is crumbly
Sprinkle topping over the sweet potato and leek loaf
Bake at 180 deg for about 40 minutes until the top is golden brown
