Sesame Brown Rice Pie

 

This pie seems to be too simple, but it is absolutely delicious. It is the sort of recipe everyone wants a copy of. It is super healthy, tasty and quick and easy to make, what more could you want.

The sesame seeds in this pie, give it a lovely, nutty flavour as well as providing a good source of manganese and copper, calcium, magnesium, iron, phosphorous, vitamin B1, zinc and dietary fiber. Sesame seeds also contain two unique substances: sesamin and sesamolin which have been shown to lower cholesterol and protect the liver from oxidative damage.

Brown rice is known to be a rich source of fibre and nutrition. The process that produces brown rice removes only the outermost layer, the hull, of the rice kernel and is the least damaging to its nutritional value.

Add to this, fresh iron rich spinach and tomatoes which are a good source of vitamin C and you have a very healthy, nutritious meal.

Ingredients

  • 4 – 6 tbsp dry toasted sesame seeds
  • 2 c cooked brown rice
  • 1 large bottle Italian sauce
  • 1 bunch steamed spinach
  • 1 – 2 c grated cheese
  • 1½ sheets puff pastry

Method

Mix sesame seeds and rice.

In an oiled baking tray, layer rice, sauce, spinach, cheese and puff pastry.

Baste pastry with water and sesame seeds.

Bake in hot oven for 10 minutes, reduce to moderate and bake for 40 – 45 minutes or until pastry is puffed and golden brown.
