Carob, Nut and Coconut Fudge

Last Saturday at the West End Centre, we held an amazing full day Ayurveda workshop. 30 people attended and apparently one of the highlights of the day were the very moorish bliss balls that were served out for afternoon tea. So simple and yet so full of deliciousness. A number of the lovely people who attended the day have asked for the recipe, so here it is. Enjoy!

  • ⅓ cup carob or coco powder
  • 1 cup honey
  • 1 teaspoon vanilla
  • ½ cup peanut butter

Combine the above ingredients in a saucepan, bring to a light boil and then remove from heat.

Add

  • ⅔ cup shredded coconut
  • ¾ cup roughly chopped nuts (macadamia nuts are really nice)
  • ½ cup whole sunflower seeds
  • ⅔ cup raisins or dates, or you can add more nuts instead of the fruit

Stir into the fudge mixture and set in the fridge, or roll into balls
